Equipped with his understanding of southern cooking, Flay, then twenty years old, returned to New York to begin his first job as an executive chef.

Bobby Flay left the job and went to the back of the kitchen after realizing he was in over his head. Flay and Laurence Kretchmer opened the Mesa Grill together in 1991. Flay has established more than 20 eateries around the United States since 1991.
