1 cup (120g) all-purpose flour, sifted
1/2 teaspoon salt
2 eggs, beaten
1 cup (240ml) milk
3 tablespoons (45g) unsalted butter, melted and cooled
vegetable oil or beef drippings, for pan-frying

Instructions:

1. Preheat oven to 425°F (220°C). Grease a 12-hole muffin tin with butter or oil.
2. In a large bowl, whisk together flour and salt. Make a well in the center and pour in eggs and milk. Gradually stir the wet ingredients into the dry ingredients until everything is combined. Stir in melted butter. Do not overmix. Batter should be lumpy.
