A cherry popover is an egg-based, cherry-topped, pan-baked pastry with a light, airy texture. Popovers are allegedly of English origin. The popover was created by Maine settlers who founded Portland, Oregon by giving the English Yorkshire pudding an American twist. They can be ingested as a dessert or as a substantial breakfast or brunch meal.

The American popover was created in the 17th century by adapting and renaming the English Yorkshire pudding recipe. But the first documented mention of the popover was in a letter by E.E. Stuart in the 1850s. She was a Catholic woman who worked as a political advocate for free schools and fought for independence as American political parties began to form and Protestants and Catholics in Michigan found common ground. In M.N. Henderson’s 1876 manual “Practical Cooking,” the term “popover” was mentioned once more, this time in the form of a recipe for the dessert.
In the late 1800s, the popover gained popularity throughout the United States. In Acadia National Park, the Jones Pond House became well-known for serving these delectable delights with tea. This custom is still practised today.
