Fresh Veggies Day is observed on June 16 to recognise the nutritional value and significance of fresh vegetables to human health. The greatest sources of micronutrients that are essential for metabolism, growth, development, and disease prevention are fresh vegetables. Vegetables’ natural fibre content prevents constipation, haemorrhoids, and colon cancer. There is no such thing as a poor vegetable, according to “Food & Wine” magazine. Some may require additional effort to remove an outer shell or skin, while others perform better when cooked. However, there is no reason not to consume daily raw vegetables.

The majority of early settlers in the United States resided near the Atlantic coast and shipped their produce east for consumption. Midway through the 1800s, however, the advent of railroads allowed farmers to ship produce directly to Chicago, where it was processed into canned products and transported back east by rail or boat.

By 1852, the distribution of fruits and vegetables across the nation had become a major issue. The California and Oregon trail was referred to by “The New York Times” as the major route for transporting fresh produce. In 1855, 59 million pounds of produce were transported by rail from the West Coast.

The Department of Agriculture was established in 1862 to ensure that all Americans had access to fresh vegetables and enhanced nutrition. They have achieved success thus far. In recent years, new organic and vegan products have entered the market, making vegetable consumption more accessible to all individuals.

Farmers in rural North Dakota convened in the spring of 1992 to discuss the future of their farms and families. They desired to transition from conventional farming, characterised by the use of agrochemicals and soil cultivation for vegetation control, to a system that would use less chemical pollution and fossil fuel. On one-fourth of their land, the farmers decided to cease using chemical pesticides, herbicides, fungicides, and fertilisers. Instead, they relied on intricate crop rotations, cover crops, manure, and compost for fertility.
