How did Global Scouse Day get started? Graham Hughes, a Liverpudlian filmmaker and television presenter, conceived the concept in his home. Every year, Hughes would host a “scouse supper” for his friends. In 2008, when Hughes left for one of his adventures, his friends thought it would be nice to continue the tradition in his absence. On February 28, which was Hughes’ birthday, they held an annual scouse dinner. They had no idea that the “scouse supper” would become a cultural phenomenon emblematic of Liverpool. Over time, “scouse” evolved into a defining characteristic, a badge of honour for Liverpool. Scouse grew from an intimate dinner idea into a citywide event. Thousands of bars, restaurants, and cafes serve scouse. Football clubs and even the mayor’s office participated in the festivities.

Everyone who prepares the dish adds something unique to their scouse to make it stand out. Meat, potatoes, carrots, onions, and Worcestershire sauce are typical ingredients. Vegetarians can prepare “blind scouse,” a meatless version. The term’scouse’ can also refer to the well-known Liverpool accent, characterised by its sharp letters and accentuated vowels. So, depending on the context, “scouse” could refer to either a stew or something that is unmistakably Liverpool. In either case, the term captures the essence of Liverpool and its inhabitants.
