International Sushi Day, observed on June 18, is the ideal occasion to indulge in the Japanese delicacy. Sushi has become a worldwide phenomenon over the past 30 years or so, after initially struggling to gain a footing in the west. All cultures initially thought that raw fish did not sound appetising, but we eventually realised that we were incorrect, and now we cannot get enough of it. International Sushi Day is the perfect occasion to practise your chopstick skills and indulge.

The origins of sushi can be traced back to a dish called narezushi. Narezushi is preserved fish aged for several months in fermented rice. In the Southeast Asian and Japanese versions of the dish, the rice was discarded and the fish was consumed. This was the first version of sushi, and the Japanese viewed it as an essential source of protein.

Between 1600 and 1800 during the Edo period in Japan, sushi as we know it was developed. Vegetables and fish were enveloped in rice and combined with vinegar. As with Narezushi, each region had its own variations, but this is close to the version with which most people are accustomed in the modern world. Early in the nineteenth century, the nigirizushi style began to emerge. This consisted of a mound of rice draped with a piece of fish.

The Great Kanto Earthquake of 1923 destabilised the Japanese economy and displaced a large number of Edo Japanese. As a result of Japanese people being forced to start their lives over in new locations, sushi spread throughout the globe.

Little Tokyo was the birthplace of sushi in the United States around the middle of the twentieth century. It garnered the attention of the public after becoming popular among Hollywood luminaries. What was once exotic to Americans became Americanized when crab and avocado replaced raw fish in the California roll. International Sushi Day was declared for June 18 in 2009. The concept originated on Facebook and took on a life of its own.
