Originally, the macaron, which consists of two almond meringue discs with a layer of buttercream filling or marmalade, was known as the “Paris macaron.” Since the early 20th century, French journalist and author Pierre Desfontaines is sometimes credited with the invention of the macron. Claude Gerbet, another baker, also claims to have devised it. (at some point in its history, the macaron was called the Gerbet cake). Since the 2010s, French macaron bakeries have become popular in North America.
