Mead is distinguished by the fact that its fermented carbohydrates are derived from honey. Honey is fermented with water to create mead. The process of producing mead is comparable to that of producing wine. Mead can be readily made with wine yeast, and honey ferments at temperatures comparable to grape juice intended for wine.

Mead, unlike wine, undergoes both primary and secondary fermentation. The initial fermentation occurs relatively rapidly. Then, when the fermentation begins to subside, the mead is transferred to a new container through the process of racking. Racking is the process of transferring intoxicating beverages from one container to another using gravity instead of a pump, so that the beverage is not disturbed. The second, more gradual fermentation takes place in the second container.

After one to two months of primary fermentation, the mead is aged for six to nine months in the second container. The fermentation period is affected by the honey’s quality, its composition, the other ingredients used, and the ambient temperature.
