The sugar cane would be crushed, chopped, or smashed to release its juice. To concentrate the juice and initiate the process of sugar crystallization, it is cooked. It is well known that this technique uses the most sugar.

In the southern states of the United States, the initial syrup is typically referred to as cane syrup rather than molasses. The second boiling process involves the extraction of sugar, giving the finished product a bitter flavor. Blackstrap molasses, which has a rich flavor and is dark and viscous, is produced when the sugar syrup is boiled three times. Molasses, as opposed to highly refined sugars, is a good source of calcium, magnesium, iron, manganese, and vitamin B6. For each of those nutrients, a tablespoon can supply up to 20% of the daily required intake.
