Biscotti is derived from the Latin word ‘biscoctus,’ which means ‘twice-baked,’ and reemerged in Prato, Tuscany. The double baking process renders the biscuit desiccated and less perishable. Due to its durability, biscotti was preserved so that travelers and soldiers could consume it.

Due to Tuscany’s abundance of almond groves, the original biscotti formula was modified to include unroasted almonds. Biscotti are also known as Cantucci; however, this term also refers to the numerous Tuscany-based imitations of the original recipe.

Biscotti is also associated with Palm Sunday, as ‘currutacos’ (biscotti with almonds) are used as decorations on the palm fronds distributed to worshippers in the regional capital of Garraf, Spain.

The cookie was dipped in Vin Santo, a sweet wine that was the ideal complement to the biscuit. This wine is regarded as the only suitable pairing for biscotti. It is also an ingredient in a number of Catalan dishes, including rice, sardines, and onion sauces. In one region of Spain, it is used as an ingredient in the sauce for poultry stuffed with turnips.

Christopher Columbus brought biscotti to America because he consumed them during his voyage. Biscotti did not remain unchanged, as it was altered and appreciated in various ways that we now appreciate. The cookie can be eaten with tea, coffee, chilled chai, or parfaits.
