The earliest historical reference to a burrito is found in the 1895 edition of the “Dictionary of Mexicanisms.” It is possible that this term, which means “little donkey” in Spanish, alludes to the packs and bedrolls that donkeys once carried. The definition described a burrito as a “rolled tortilla containing meat or other food.” The dish first gained popularity in Guanajuato and Guerrero before gaining traction in the United States.

Originating near Fresno and Stockton, California, modern burritos (tortillas filled with beans and hot sauce) first appeared on restaurant menus in the 1930s, beginning at the El Cholo Spanish Café in Los Angeles. The first recipe for the popular dish appeared in Erna Fergusson’s “Mexican Cookbook” in 1934.

Burritos have evolved throughout time. American burritos contain numerous ingredients, whereas Mexican burritos contain only meat and legumes. In 1964, the first refrigerated burrito was sold. Chimichangas are now the affectionate term for fried tortillas. Breakfast burritos were first introduced by Tia Sophia’s in Santa Fe, New Mexico, in 1975. A tortilla is stuffed with bacon, potatoes, chili, and cheese for brunch. In 2014, Taco Bell introduced its own popular brunch burrito.
