National Gazpacho Day 2023: Anybody who has tried gazpacho would tell you that it’s just plain old tomato soup with a cooled, delicate cousin. However, that wasn’t always how gazpacho was made; it was first created in Andalusia, a region of Spain, most likely in the Middle Ages. Using a mortar and pestle, people back then combined stale bread, oil, and vinegar to create it.
Since Spain was a part of the Islamic world at the time, the word gazpacho is Arabic meaning “soaked bread.”These days, the main ingredients are tomatoes or tomato juice, bell peppers, and cucumbers, which are blended into soup (if you’re feeling very traditional, you may also use a mortar and pestle). On December 6, let’s all celebrate National Gazpacho Day as we know you’re hungry!

The soup tastes better after it has had chance to settle for a bit, so if at all possible, try to make it a few hours before you intend to eat it.
