American muffins evolved into what we now know as quick bread muffins by the end of the 18th century, thanks to their better recipe, which was made in individual molds. The discovery of pearlash allowed for the creation of this particular muffin style. Potash, or pearlash, as it is more often known, was later superseded when baking soda gained popularity.

American-style muffins are made with batter rather than dough, so you’ll need molds for baking. Oatmeal muffin recipes first appeared in American cookbooks in the mid-1800s; they are shaped and sized similarly to cupcakes.

Amelia Simmons, the author of the first American cookbook “American Cookery,” used pearlash in her recipes. The popularity of pearlash grew to such an extent that in 1792, over eight thousand tons were shipped to Europe. Baking powder wasn’t made commercially available until 1857.
