National Pupusa Day is an El Salvadoran celebration honoring the pupusa, a flatbread resembling a tortilla that is stuffed with meat, beans, and other delectable ingredients. It has come a long way from its origins as a staple food among early Indian communities.
Pupusas have a lengthy and contentious past. At present, there is ongoing debate regarding the origin of this delectable delicacy, with El Salvador being the more widely accepted candidate (although Honduras claims credit as well). Empirical evidence suggests that pupusa production dates back at least 2,000 years, if not earlier.
In fact, the incorporation of flesh into pupusas did not occur until 1570, rendering that innovation relatively recent in its historical trajectory. Previously, the fillings consisted of squash blossoms, mushrooms, and other resilient vegetables.
Pupusas remained primarily regional thereafter; they did not migrate northward until the 1980s, coinciding with the El Salvadoran civil war and the subsequent migration of a substantial population to the United States. Pupusas remained primarily a neighborhood delicacy until 2011, when they were proclaimed the finest street food in New York by the Guardian. This distinction was particularly significant for a city that is perpetually in motion.
The pupusas subsequently acquired the global recognition that they presently possess.
