It can be traced all the way back to the period of fermentation and is beloved for its abundance of flavour, flesh type, preservation methods, and even processing variations.

Salami is a slender, mean, cured, and fermented machine that is world-famous, contains numerous health benefits, and has multiple personalities. This peppery, air-dried sausage is a favourite in delis and butcher shops and has been around for so long that its origin is difficult to trace. Salami is typically produced from pork, but beef, wild boar, goose, venison, and even duck can be used to create unique variations.

Historically, salami was favoured by peasantry in Southern, Eastern, and Central Europe, but it is now commonly associated with Italy and the Mediterranean. Once cut, it can be stored at room temperature for up to 40 days, and countries and regions throughout Europe produce their own traditional salami varieties. The term “salami” is the plural of “salame,” which is derived from the Italian word for salt.

In addition to variations in salami flavour, methods, recipes, and even fermentation times vary globally. Typically, salami is produced by finely grinding meat and then flavouring it with spices or herbs. Garlic, white pepper, vinegar, and even wine are among the most common flavourings. The meat mixture is then air-cured in a pork or beef casing and aged for at least 30 to 90 days.

Although the origins of salami are unknown, the Romans may have introduced modern techniques. National Salami Day was created by the Salami Appreciation Society and was first observed in Henrico and Virginia in 2006. Since then, it has been celebrated annually on September 7th.
