Once cut, it can be stored at room temperature for up to 40 days, and countries and regions throughout Europe produce their own traditional salami varieties. The term “salami” is the plural of “salame,” which is derived from the Italian word for salt.
In addition to variations in salami flavour, methods, recipes, and even fermentation times vary globally. Typically, salami is produced by finely grinding meat and then flavouring it with spices or herbs. Garlic, white pepper, vinegar, and even wine are among the most common flavourings. The meat mixture is then air-cured in a pork or beef casing and aged for at least 30 to 90 days.
Although the origins of salami are unknown, the Romans may have introduced modern techniques. National Salami Day was created by the Salami Appreciation Society and was first observed in Henrico and Virginia in 2006. Since then, it has been celebrated annually on September 7th.
