National Undhiyu Day 2024: Celebrated annually on January 14, National Undhiyu Day honors the Gujarati people of India’s traditional meal, Undhiyu, which is a mixed vegetable dish. This dish’s name comes from the Gujarati term “undhu,” which translates to “upside down.” Traditionally, the meal is prepared underground in upside-down earthen pots known as “matlu,” which are heated from above rather than below, as is the more conventional approach. This is a seasonal dish made with a wide range of winter vegetables that may be found along the south Gujarat coast and its surrounding areas, like green beans. After that, these vegetables are seasoned with a dry curry paste made from a combination of different spices and occasionally freshly shredded coconut.
