The humble Welsh dish ‘rarebit’ is commemorated on September 3, National Welsh Rarebit Day. It is unknown why this date was chosen, but we are certain that this dish from centuries past does not contain rabbit. The term ‘rarebit’ is derived from the Welsh language, but it merely refers to thickly sliced bread topped with an extravagant cheese sauce. The mere thought of the melted cheese makes the mouth salivate.

Except for a few variations, the essential ingredients and preparation for all the recipes were identical; for English rarebit, the bread was basted in wine after toasting, and the cheese was broiled on top. The bread used to prepare Scottish rarebit was buttered, while the bread used to prepare Welsh rarebit was buttered and spread with mustard.
There have been numerous variations of the dish over time. The addition of eggs results in a dish known as a ‘Golden Buck.’ Tomatoes give the dish the appearance of a ‘Blushing Bunny.’ Some individuals experiment with the ingredients by also including caramelised shallots.
Welsh rarebit was commonly served as a delectable and filling supper in the 18th century. It was served alongside ale in pubs. The cheese sauce is comparable to fondue, with the exception that conventional European fondue uses Swiss cheeses, whereas rarebit uses cheddar. Welsh rarebit is still regarded as a hearty dish that pairs well with broth or tossed salad.
