The background of World Cider Day
By the time the Romans invaded England in approximately 55 BCE, the Celts were already enjoying cider. Apple trees were already well-established throughout Europe and Asia, having been introduced from the forests surrounding Kazakhstan. In southern England, France, and Spain, the fruit fermentation (and later distillation) process was perfected.
In the early 19th century, John Chapman, better known as Johnny Appleseed, established apple nurseries along the frontier in the United States. Since he was strongly opposed to grafting apple trees — a common practise in Europe consisting of joining plant tissues to generate genetically identical fruit — the apples used to make cider at the time were native to the United States.
In most countries, apple cider is automatically designated an alcoholic beverage, but in the United States, there is a distinction between apple cider and hard apple cider. In most cases, when Americans say “cider,” they truly mean unfiltered apple juice, whereas “hard cider” refers to the alcoholic beverage that the rest of the world recognises.
Because apples are minimal in sugar, cider contains little alcohol. Even the most sugary fruit contains significantly less sugar than grapes. In cider vats, yeast consumes any available sugar and converts it to alcohol and carbon dioxide. Once all of the sugar has been consumed, the yeast dies, leaving behind a cider that contains only 4% to 5% alcohol. Currently, some cider producers add additional sugar and yeast to their mixture, enabling carbon dioxide to build up and create bubbles within the bottle.
