Microwave fresh cream and dark chocolate (roughly chopped) for 30 seconds. Combine and let stand, covered, at room temperature for 4 hours. You can pipe the chocolate ganache now.
Using a glass, cut two teddy bear ears from a six-inch chocolate cake. Cut each ear into two sections. Set aside.
Place the bottom cake layer and lightly press it in. Adjust after placing the lower layers of the two ears above the 8-inch cake.
Use a brush to evenly spread cocoa syrup over the cake. Spread whipped cream without dairy.
Evenly distribute the grated dark chocolate. Place the cake’s top layer on top of it, bottom side up. Using a brush, evenly coat the cake in cocoa syrup. Spread whipped cream over the cake’s sides and walls after covering the top.
Put the cake in the fridge for three hours or longer. Use a toothpick to draw the mouth three hours later. Spoon small open star tip nozzle and white whipped cream into piping bag. Fill the inner side of the eyes, inner side of the ears, and the mouth area (avoid the nose).
Fill the remaining space on the face and ears with a small closed star tip nozzle and blue whipped cream (or any color of your choice) in a piping bag. Use a small closed star tip nozzle and blue whipped cream to cover the side walls as well. Use a tiny open star tip nozzle and dark chocolate ganache to fill the remaining space around the eyes and nose. Cake with Teddy Bears is ready. Before chopping, refrigerate for at least three hours.
Heat oven to 375°F. In a bowl, combine sugar, butter, egg and vanilla in bowl. Beat at medium speed, scraping bowl often, until well mixed. Add flour, baking powder and salt; beat at low speed, scraping bowl often, until well mixed.
Divide dough in half. Place half of dough into another bowl; stir in chocolate until well mixed.
Shape each teddy bear using either vanilla or chocolate dough or a combination for two-toned teddy bears. Shape 1 large (1-inch) ball for body. Place onto ungreased cookie sheet; flatten slightly. Shape 1 medium (3/4-inch) ball for head, 4 small (1/2-inch) balls for arms and legs, 2 smaller balls for ears. Attach head, arms, legs and ears by overlapping slightly onto body. Add small balls for eyes, nose and mouth, if desired. Use fork to make claws on paws.
Bake 7-8 minutes or until body is set. Cool 1 minute on cookie sheet; remove to cooling rack. Cool completely. Enjoy with your family, friends and loved ones through this Valentine’s Week and Valentine’s Day.
