The crustacean, which is now regarded as a fine delicacy throughout the majority of the globe, has seen darker days. Pacific Standard Magazine writes of a time when “consumers could buy Boston baked beans for 53 cents a pound, canned lobster sold for just 11 cents a pound.” When New England’s maritime region was virtually covered with lobsters, they were relegated to prison food. As a food staple, lobsters have traveled a long way. National Lobster Day is observed on September 25 because rags-to-riches tales are always worthy of celebration.

The background of National Lobster Day

The lobster’s rags-to-riches transformation occurred only after a railroad began serving the flesh to unaware passengers as an exotic delicacy. With railroads crisscrossing the country, word quickly spread about this delicacy, which was alien to everyone except those from the Northeast. While being frugal is a commendable trait in and of itself, there is something special about indulging, and lobsters make that simple.

What is not enjoyable about being posh? They chew with their stomachs and flavor with their legs. Still not persuaded? Lobsters can regenerate appendages and exert up to 100 pounds per square inch of force between their grasping claws.
