In 1608, Sir Thomas Phillips’ Bushmill in Antrim, considered by many to be the world’s oldest distillery, was granted a licence to produce whisky. King James sanctioned the action. In 1757, the distillery received its licence to trade, making it the first distillery in Ireland to do so. In 1759, a law was passed that allowed potato, sugar, and grain to be added to Irish whisky. In the 1800s, Ireland quickly became the whisky capital of the world. John Jameson founded the renowned whisky company Tullamore Dew in 1829.

Stuart McNamara, who was born in West Cork, established International Irish Whiskey Day because he believed that people did not recognise and value Irish whisky sufficiently. He wished for people to understand the history of Irish whisky and its traditional production. This traditional method is responsible for its exceptional flavour, which is adored by whisky enthusiasts worldwide.
