National Chop Suey Day is celebrated on August 29 to honour this outstanding American-Chinese dish. Chop suey is prepared with a variety of ingredients, including vegetables, meat, and eggs, and is served with rice or noodles. Many Americans have grown up eating it and continue to appreciate it as adults. As a result of globalisation, chop suey is now a globally popular dish. There may be minor variations in the formulation, but the element of delectability remains constant. As there are hundreds of different chop suey recipes, there are also numerous origin legends. Chop suey’s origin tales take one on quite the ride, from transcontinental roads to immigrants in a new country to royal courthouses.

The background of National Chop Suey Day

National Chop Suey Day honours the iconic dish whose name has multiple origin legends. According to E. N. Anderson, a historian of Chinese cuisine, chop suey may have originated in the county of Taishan in the Guangdong province of China. Chop suey, also known as ‘tsap seui,’ which translates to’miscellaneous morsels,’ may have been brought to America by the earliest Chinese immigrants. In the 1840s, when gold was discovered in California, a significant number of Chinese immigrants sought their fortune in the United States. Chop suey satisfied the Chinese immigrants’ hunger after a day of digging for gold because it was inexpensive and filling. The majority of the Chinese immigrants were males who arrived in America with little to their names. After that, the dish gained popularity among the general public.

Other scholars hypothesise that the dish may have been created in the New York home of Li Hongzhang, a Chinese diplomat. In order to provide a satisfying meal for both Chinese and American guests, Hongzhang instructed his chef to prepare something that would satisfy both groups. Chop suey is said to have been the consequence of this American-Chinese fusion. According to another legend, the dish was created by an exhausted and terrified chef. The aforementioned caterer operated a restaurant on the transcontinental railway. As he was closing his restaurant for the day, a group of intoxicated sailors entered and ordered the chef to prepare something delectable. The caterer gathered the day’s leftovers, which included meat, prawns, vegetables and eggs, out of fear of being beaten. He served these ingredients to his patrons after cooking them over high heat. The dish became an instant success and exploded in popularity, prompting the chef to add it to his menu. Regardless of which legend you choose to believe, one thing is certain: chop suey dominates the global cuisine scene.
