Hundreds of years ago, fruit desserts were cooked over open flames in cast-iron skillets. Any type of fruit would yield a cake with a delicious flavour. Because the earliest cast-iron skillets had legs, they were nicknamed “spiders.” At this time, the cakes were commonly referred to as’spider cakes.’ When ovens became commonplace in American homes, skillets lost their legs and transitioned to a flat-bottomed pan that fit more readily in the ovens.

The Hawaiian Pineapple Company sponsored a competition in 1925 to discover the best pineapple recipes. With “Good Housekeeping” and “McCall’s” magazines promoting the competition, more than 60,000 entries were submitted. Only 2,500 of those recipes were for pineapple upside-down cake. The popularity of the cake skyrocketed after 100 of the winning recipes were published in a cookbook the following year.
