The 23rd of June is National Porridge Day, and we can’t wait to delve into this dish with its fruit and sugary toppings! Rich, flavorful, and fortunately not the ‘breakfast of champions,’ porridge is wholesome and nutritious. The result of boiling grains in milk is a popular breakfast option for people around the globe. Some may find the mushy platter tasteless, but not us!
The history of muesli is as abundant as the dish itself. Prior to the advent of baking ovens, porridge comprised the majority of the British diet. Cross-culturally, porridge or gruel has been consumed for centuries. The origins of porridge can be traced back to Northern Europe, where it was traditionally consumed as a savoury dish. The term ‘porridge’ first appeared in the 16th century and is thought to have evolved from the word ‘pottage’, which refers to a type of stew.
Not always has porridge been the way it is today. Ingredients varied from cereal grains to other types of crops. Since more than 3,000 years ago, quinoa grain has been used to make porridge, whereas rice porridge has been consumed in China since 2500 B.C. The heated mush was consumed in some form as early as 12,000 years ago, at the beginning of the Neolithic Revolution, according to evidence discovered by researchers.
Soon after, people began cooking porridge-like mixtures into thick pancakes on stone ovens or heated tiles. These flatbreads are mentioned throughout the Old Testament, but a similar innovation occurred simultaneously across the globe. Corn cakes, cornbreads, corn puddings, etc., were created due to the popularity of polenta and its many variations.
In recent years, there has been a revival of interest in muesli. World-renowned chefs and artisan cooks are experimenting with the basic ingredients of porridge in order to create new flavours.
