According to food historians, lemon desserts have existed since the Middle Ages. On the other hand, whipped cream appears to be a very modern invention, dating back to the sixteenth century. Before emerging in France after 1600, it initially appeared in Italian cuisine in the mid-1500s. Sometime in the future, someone had the wonderful idea of marrying them like sunlight in a pie.

Famous culinary historian William Woys Weaver called Goodfellow “among the most innovative forces in American cuisine” in the early nineteenth century. Her business stood out. Unlike the many bakeries that sold bread and baked goods, Goodfellow’s pastry bakery hosted high society gatherings in Philadelphia with gorgeous cakes, pies, and sweets.
Although renowned for a variety of delectables, such as queen’s cakes, jumbles (early versions of sugar cookies), and individual spiced cakes infused with Madeira and cognac, her most enduring contribution is the introduction of lemon meringue pie.
Becky Diamond, a food historian, regards Goodfellow as “the mother of lemon meringue pie.” Goodfellow was well known for her lemon pudding, which she made in numerous varieties to be eaten alone or as a “pie” in a pastry shell. Lemons were a luxury in the early nineteenth century, but they were widely available in Philadelphia, a large port city.
