Becky Diamond, a food historian, regards Goodfellow as “the mother of lemon meringue pie.” Goodfellow was well known for her lemon pudding, which she made in numerous varieties to be eaten alone or as a “pie” in a pastry shell. Lemons were a luxury in the early nineteenth century, but they were widely available in Philadelphia, a large port city.
